Peheat oven to 350 degrees. Peel the bananas and arrange in an ovenproof casserole. Pour the wine or rum, sherry, and sugar over them, and sprikle with butter and cinnamon.
Cover the plantains and bake for 20 to 25 minutes. Uncover, turn the plantains over, baste, and bake, uncovered until golden brown on top, another 15 minutes. Serve hot

- 4 medium size very ripe plantains
- 6 tbsp. white sugar
- 6 tbsp. brown sugar
- 1/2 cup dry white wine or rum
- 1/4 cup dry sherry
- 2 cinnamon sticks
- 2 tsp ground cinnamon or nutmeg (to taste)
- 4 tbsp. salted butter
